Chicken Curry & Poppadoms

You Will Need

This dish is perfect to enjoy as leftovers!

  • 300g chicken breasts (serves 2) (150g / person)
  • Onion
  • Garlic
  • 1/2 tin LITE coconut milk
  • 1 Packet of Vindaloo Spice
  • 1/2 tin of tomato braai Relish

Woolies has a great range of spices! My favourite is the Vindaloo, Rogan Josh and Butter Chicken – these are spices, not sauces!

Method

  • Start with your base and fry onion, garlic and spice packs
  • Add your protein
  • Let it cook and then add 1x tin of tomato
  • Add the tin of LITE coconut milk
  • Serve with a side rice, couscous or in a poppadom
  • Additional: add coriander or a mint dressing (fat-free yogurt with chopped mint leaves, garlic and salt)
