You Will Need
This dish is perfect to enjoy as leftovers!
- 300g chicken breasts (serves 2) (150g / person)
- Onion
- Garlic
- 1/2 tin LITE coconut milk
- 1 Packet of Vindaloo Spice
- 1/2 tin of tomato braai Relish
Woolies has a great range of spices! My favourite is the Vindaloo, Rogan Josh and Butter Chicken – these are spices, not sauces!
Method
- Start with your base and fry onion, garlic and spice packs
- Add your protein
- Let it cook and then add 1x tin of tomato
- Add the tin of LITE coconut milk
- Serve with a side rice, couscous or in a poppadom
- Additional: add coriander or a mint dressing (fat-free yogurt with chopped mint leaves, garlic and salt)
