You Will Need
- 500G Butternut
- 1tsp Butter /Butro/ margarine (5g or tsp olive oil)
- 1 large onion
- 1 tsp Curry powder
- 1 Granny Smith green Apple- peeled
- Grated orange zest + juice of 1 orange
- Salt & pepper
- Chicken Stock (1 & ½ cube or 2 tsp powder )
- Water
Method
- Start by melting your butter and then frying your onions and spices.
- Then add your apple slices + butternut, let it brown slightly before you add your chicken stock + orange juice + water
- You can add some coconut milk/ a dash of any milk after it’s blended.
- That’s it, let it cook and simmer for about 20 minutes.
- I used my @omniblendsa , but you can use any hand blender too!
- Served best with fresh bread or a side of protein, or both
