Butternut Soup

*Serves 4

You Will Need

  • 500G Butternut
  • 1tsp Butter /Butro/ margarine (5g or tsp olive oil)
  • 1 large onion
  • 1 tsp Curry powder
  • 1 Granny Smith green Apple- peeled
  • Grated orange zest + juice of 1 orange
  • Salt & pepper 
  • Chicken Stock (1 & ½ cube or 2 tsp powder )
  • Water

Method

  1. Start by melting your butter and then frying your onions and spices.
  2. Then add your apple slices + butternut, let it brown slightly before you add your chicken stock + orange juice + water
  3. You can add some coconut milk/ a dash of any milk after it’s blended.
  4. That’s it, let it cook and simmer for about 20 minutes.
  5. I used my @omniblendsa , but you can use any hand blender too!
  6. Served best with fresh bread or a side of protein, or both
